Food preservation is vital for ensuring food security, particularly in villages where agriculture is a primary livelihood. In India, about 40% of food produced is lost or wasted due to inadequate storage facilities, according to the Indian Council of Agricultural Research. Implementing effective preservation methods, such as solar drying and improved storage techniques, can significantly reduce this wastage. For instance, using solar dryers can extend the shelf life of fruits and vegetables by 6-12 months, providing a steady food supply and additional income for villagers. By adopting these methods, villages can enhance food security, reduce waste, and improve their economic stability.

Keeping this in mind sundesh organized a food preservation training program for SHG women and local villagers under the guidance of trainer from Krishi Vigyan Kendra( G.B Nagar) and Food Preservation Department (G. B Nagar). Participants gain important knowledge about canning, drying, freezing, and pickling techniques through hands-on sessions. There is advice provided on where to find reasonably priced food ingredients and packaging. As a means of encouraging better eating practices, participants are taught about the nutritional advantages of preserved foods.
